Mini Corn Dog Muffins

I stumbled upon this great blog the other day, Blissful and Domestic! You may have heard about her thrifty lifestyle of living on a budget of $14,000 a year! She's got some great tips for how to live frugal and lots of yummy and inexpensive recipes too!

On Sunday nights we usually do leftovers or something quick and simple. I found this recipe for mini corn dog muffins on her site. They were cheap and easy, tasty and much healthier that corn dogs you buy from the store!

Mini Corn dog Muffins

3 hot dogs (I used turkey dogs)
1 cup flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup water
1 egg, lightly beaten  (or substitute applesauce)
1/4 cup milk
2 tablespoons butter, melted
1/2 tablespoon ground flax seed

Preheat oven to 400'. In a bowl, combine dry ingredients. Add water, egg, milk, and melted butter, stir until moistened. Pour into 12 prepared muffin tins. Cut your hot dogs into fourths. Place one hot dog piece into each muffin tin and push down lightly. The hot dog will not be covered by the batter, as they bake the cornbread will cover the hot dogs.

Bake for 15 minutes, or until cornbread is cooked. Serve hot and with a side of ketchup!
