Lentil Turkey Tacos

Lately we have been trying to eat healthier and cheaper. I had seen some recipes for lentil tacos, but was a little nervous to try only lentils our first time. I decided to try mixing it with the ground turkey and this way it would make plenty of leftovers to freeze for another meal too.



Lentil Turkey Tacos (or nachos)
1 pound ground turkey
1 cup uncooked lentils (1 cup uncooked lentils equals about 1 pound of ground meat)
2 pkg taco seasoning or homemade seasoning
taco fixings (cheese, tomato, etc)


Boil 3 cups of water. Toss in your lentils and simmer, vented, for 15 to 20 minutes. While lentils are simmering, brown your turkey. Drain turkey and toss in with your cooked lentils. Follow pkg directions to add the seasoning. Add your favorite toppings and enjoy!

* Lentils when cooked, are a very close consistency to ground turkey so you can't really tell much of a difference when eating it. 

*It didn't have quite as much flavor as when I just make ground turkey, so next time I may add a little more seasoning or simmer lentils in veggie broth instead of just water.
